Ingredients

Apple filling Crumble
  • 4 pieces of green apple
  • 2g of cinnamon powder
  • 20g of black raisin
  • 120g of sugar
  • 75g of softened butter
  • 20g of corn flour mixed with water to form a thickened slurry
  • 150g of flour, sieved
  • 150g of ground almond
  • 150g of sugar
  • 150g of softened butter

Methods

Step 1.

Peel the skin off apple, remove the seed and cut into 1cm cubes.

Step 2.

Mix the apple cubes, cinnamon and raisin together and set aside.

Step 3.

Heat sugar in a pan until it caramelises and add in butter cautiously as the hot mixture may splatter.

Step 4.

Cook the apple in the pan and add in the thickened corn flour mixture. Once cooked, set aside.

Step 5.

Pre-heat oven to 160°C using the fan mode or 4D Hot Air program on the Bosch Combi-steam oven.

Step 6.

Mix butter, sugar, almond and flour in a mixer (in this exact order) until the mixture is homogenous.

Step 7.

Break the mixture into crumble bits with your fingers.

Step 8.

Bake the crumble till it is cooked and turns light brown in colour.

Chef’s Tip: Toss the crumble bits frequently into the oven with a spoon or spatula for even colouration.

Step 9.

Serve in cup/plate with ice cream.
