Method
1. Pulse biscuits in a blender until a fine crumb.
Note: you can also place biscuits into a snap lock bag and crush with a rolling pin.
2. Transfer into a large bowl and combine with butter.
3. Press into a lined baking tin with a spoon or base of glass and set aside.
4. Place cream cheese, icing sugar, lemon juice and rind into a blender and beat until combined.
5. Scoop onto the biscuit base in the baking tin and spread evenly using a spatula.
6. Place into the fridge overnight to set.
7. Remove from fridge and top with lemon curd. Slice to serve.
