Ingredients
1.2 kg Whole fish, cleaned (snapper or barramundi) | 3cm x 3cm piece ginger, peeled, sliced |
1 bunch fresh coriander, washed | ¼ cup soy sauce |
6 green spring onions, sliced | ¼ teaspoon sesame oil |
Method
Step 1.
Preheat Bosch using Assist, fish, whole, weight.
Step 2.
Score fish crossways at 3cm intervals.
Step 3.
Finely chop roots from bunch of coriander. Reserve leaves. Discard stems.
Step 4.
Place onions, coriander root and half the ginger into cavity of fish. Place fish in a large roasting pan lined with baking paper.
Step 5.
Place in oven and cook as indicated.
Step 6.
Meanwhile, finely chop coriander leaves. Thinly slice remanning ginger into matchsticks. Place in a jug with soy sauce and sesame oil. Stir to combine.
Step 7.
To serve, pour sauce over fish.
